New Cooking Series – 1) Spicy Roast Potatoes
For the first video in our new cooking series with the Little Range, we went for something that everybody knows and loves – spicy roast potatoes! We love the extra little kick that you get from the spices, but this part can be easily skipped if you’re not a fan of chillies. Why not try our West Country alternative to the famous ‘patatas bravas’ from Spain?!
We’ve listed the ingredients that we used to make our own spicy seasoning mix below. If you don’t fancy making your own mix, then The Spice Shop offer a huge variety of fantastic spice blends here.
Spicy mix
1 tbsp posh ketchup
1 tsp chilli jam
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp cayenne
1/2 chilli flakes
3 cloves crushed garlic
Dash of olive oil
Juice of two satsuma segments
Salt & black pepper
- Begin by peeling and quartering some potatoes and boil them until they just start to break down. To boil the water, place the pan on the right-hand side of the cooking plate.
- Add extra small logs to produce a good flame pattern along with a small amount of primary air to allow the stove to burn faster.
- Meanwhile, add some olive oil to a roasting tray and place the tray in the bottom of the oven to heat up.
- Once the potatoes are softer, drain the spuds and rough them up a little by shuffling them in the colander.
- Place the potatoes in the pre-heated roasting tray, rolling them in the hot oil. Make sure they all have a good coating and then place them in the top of the oven.
- Time for the spicy seasoning! Mix the below ingredients together and add a little olive oil to loosen the mixture.
- Rotate the tray and potatoes periodically. This will help to crisp them up on all sides.
- When nearly crisp enough, add the spicy mix and roll the potatoes around.
- Return them to the oven for a further 5 to 10 mins to cook out the spices a little.
- Remove from the oven and they are ready to serve. Spicy roast potatoes also make for the perfect cold snacking treat the next day, if any are left!
