New Cooking Series – 3) Parsnip, Spinach and Coconut Curry Soup
We made a delicious parsnip, spinach and coconut curry soup with the help of our Little Range Cook Stove! We also decided to serve it with garlic and herb croutons for an extra crunch!
This really is the perfect meal to give you that extra bit of warmth on a cold day. You could even tweak the recipe and add in a bit of chilli for another little kick!
This tasty parsnip, spinach and coconut curry soup can be made in just 10 simple steps. We’ve made a short video that will show you what to do, but we’ve also included a more detailed recipe that you can find below.
Remember, cooking on wood takes more time. The slower the cooking often results in a much deeper flavour, so there’s no need to rush things when making soup!
- Peel and bayonet 3 or 4 parsnips.
- Place them in a pan of salted boiling water for 5/10 mins to soften the outside a little and then drain.
- Coat in curry infused oil and roast off for an hour or so. Alternatively, caramelise them using a wok on the top of the stove.
- Gently sauté an additional cup of finely chopped onion, celery and carrot along with the parsnips.
- Add a little stock to promote some steam and then the spinach and wilt gently into the mixture.
- Pour over 2 pints of vegetable stock and a squeeze of lemon or lime juice.
- Bring to a gentle simmer and cover with a lid for an hour.
- Add a tin of coconut milk and bring back to the simmer.
- Blend and pass through a sieve for an extra creamy finish.
- Serve with a drizzle of garlic/herb oil and croutons.
It’s also super easy to make our crunchy garlic and herb croutons! All you’ll need to do is chop up an old loaf of bread into some small cubes and roll them in some garlic and herb infused oil.
Next, place the cubes of bread in a roasting tin and pop them in the oven. Periodically toss the cubes around to crisp them up on all sides!
